As I told Johnny Carson in one of my <em>Tonight Show<\/em> appearances, (that re-ran on some obscure channel last month,) \u201cMy mother taught me how to not cook.\u00a0 Then guys take you out to dinner.\u201d\u00a0 I was basically joking about that, because only one date ever asked me to cook for him, anyway, (in my first week in LA as a teen-ager, when I didn\u2019t know any better. But <em>of course<\/em> I didn\u2019t do it! I went on my first date with Mr. X instead!)\u00a0 My little mo wasn\u2019t proficient in the kitchen, so I did inherit that <em>in<\/em>ability.<\/p>\n<p><a href=\"http:\/\/itsnotaboutme.tv\/news\/wp-content\/uploads\/2016\/07\/blog-food-100-2-e1470024344543.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-24044\" src=\"http:\/\/itsnotaboutme.tv\/news\/wp-content\/uploads\/2016\/07\/blog-food-100-2-e1470024344543-300x146.jpg\" alt=\"blog-food-100-2\" width=\"300\" height=\"146\" srcset=\"https:\/\/itsnotaboutme.tv\/news\/wp-content\/uploads\/2016\/07\/blog-food-100-2-e1470024344543-300x146.jpg 300w, https:\/\/itsnotaboutme.tv\/news\/wp-content\/uploads\/2016\/07\/blog-food-100-2-e1470024344543.jpg 455w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>But, since my mini-stroke nine months ago, I\u2019ve had to learn.\u00a0 When you have to be very careful about what you eat, for drastic medical reasons, you have to take it very seriously.\u00a0 And, trust me, I do.\u00a0 We read every label now, and shop very carefully.\u00a0 Because I\u2019m still so in love with restaurants, I do go out to them occasionally, but not even close to as much as I\u2019ve always done.\u00a0 And, since I eat mainly salads when dining out, (because I can\u2019t trust strangers to tell me the truth about their ingredients,) I haven\u2019t reviewed a restaurant since \u201cthe episode.\u201d\u00a0 (I plan to again, because I always have a posse with me when I review, anyway. I just haven\u2019t had the time in awhile.)<\/p>\n<p>Mr. X has really helped-out in the culinary.\u00a0 He taught himself how to grill chicken, swordfish, vegetables, and even potatoes. He even followed my recent instructions of how to make turkey burgers, (the process of which I was just making-up as I went along!)<\/p>\n<p>Most of what I cook comes from internet recipes.\u00a0 Or even from vegetable or turkey packages.\u00a0 But occasionally, I come up with one myself, which I get really proud of when they work.<\/p>\n<p>And this is one of those times.\u00a0 I make microwave brown rice on occasion, and, although it\u2019s good for me, it\u2019s more than boring.\u00a0 (I usually make it only when I have fresh salsa on hand, to spice it up.)<\/p>\n<p>But recently, when Mr. X was planning to grill up some fish the next day, (yes\u2014I always have to plan the next day\u2019s meals now\u2014welcome to real life!,) I felt that we needed something more special to go along with it.\u00a0 So, I actually gave it some brain power as I was on my way to sleep.<\/p>\n<p>And I came up with a top secret recipe that was so delicious that I just had to share it.\u00a0 (Making it not such a secret recipe after all, right?)\u00a0 And it\u2019s simple.\u00a0 I\u2019m pretty sure you have all the ingredients on hand, anyway, (expect perhaps, for the main one\u2014the instant brown rice!)<\/p>\n<p>So, here it is.\u00a0 (I made it for two people, but next time, I\u2019ll double everything.\u00a0 And, I\u2019m not great with amounts\u2014I rather go by feel.\u00a0 But this time, I measured the items, just to control it.)<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>1 cup microwaveable instant brown rice (a store brand is the same as a name one)<\/p>\n<p>1 cup water<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>1\/2 teaspoon dried parsley<\/p>\n<p>1\/4 teaspoon ground black pepper<\/p>\n<p>1\/4 cup raisins<\/p>\n<p>1\/4 chopped walnuts<\/p>\n<p>1\/4 cup chopped onions<\/p>\n<p>1\/2 teaspoon rosemary<\/p>\n<p>1\/2 teaspoon thyme<\/p>\n<p>1\/2 teaspoon basic Mrs. Dash<\/p>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<p>Combine instant brown rice, water, oil, parsley, and black pepper in a microwave-safe dish.<\/p>\n<p>Cover with microwave-safe lid.<\/p>\n<p>Heat in the microwave for 7 minutes.\u00a0 Remove from oven, and stir in the onions, raisins, walnuts,<br \/>\nrosemary, thyme, and Mrs. Dash.\u00a0 Return the cover, and let stand for 5 minutes.\u00a0 Stir and serve.<\/p>\n<p>Notes: All spices and fun ingredients are optional, or can be replaced.\u00a0 You can use craisins in place of raisins, pecans rather than walnuts, omit onions if you\u2019re not fan, and change or omit all spices.\u00a0 And you can use more or less of those items, as well. But this original recipe was perfect just the way it is, so I\u2019d stick with it, if you can.\u00a0 Mr. X and I are both very picky eaters, with different tastes, and we both went nuts for it.\u00a0 He said it\u2019s \u201crestaurant quality,\u201d and is already asking when we can have it again.\u00a0 For me, there\u2019s no better endorsement than that!<\/p>\n<p><strong>Enjoy!<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>KAREN\u2019S SPECIAL BROWN RICE RECIPE I rarely share recipes with you guys.\u00a0 Perhaps that\u2019s because I never used to cook.
